Miso Banana Bread

A deeply caramelised banana bread with white miso for a salty-sweet edge.

Ingrédients

  • 3 very ripe bananas
  • 100 g unsalted butter, melted
  • 2 tbsp white miso paste
  • 120 g brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g plain flour
  • 1 tsp baking soda

Préparation

  1. Heat the oven to 170°C fan and line a loaf tin.
  2. Mash the bananas, then whisk in the melted butter, miso paste, brown sugar, eggs and vanilla until smooth.
  3. Fold in the flour and baking soda just until no dry streaks remain.
  4. Pour into the tin and bake for 50-55 minutes until a skewer comes out clean.
  5. Cool in the tin for 10 minutes before turning out.

Banana bread but make it better with miso. Three really ripe bananas mashed up. Whisk in melted butter, two tablespoons of white miso, brown sugar, two eggs and vanilla. The miso sounds weird but it gives this salted caramel thing that is unreal. Fold in plain flour and baking soda, don't overmix. Into a lined loaf tin, one seventy fan for about fifty five minutes. Let it cool a bit before you slice it. The crust goes so caramelised, trust me on the miso.
