Creamy Carrot & Ginger Soup

A 20-minute blended carrot soup with fresh ginger and a swirl of cream.

Ingrédients

  • 1 kg carrots
  • 1 onion
  • 2 cloves garlic
  • thumb of fresh ginger
  • 1 litre vegetable stock
  • 100 ml single cream
  • olive oil
  • salt and pepper

Préparation

  1. Peel and roughly chop the carrots, onion, garlic and ginger.
  2. Sauté the onion in a splash of olive oil over medium heat until soft, about 5 minutes.
  3. Add the garlic and ginger and cook for another minute until fragrant.
  4. Add the carrots and vegetable stock, bring to a boil, then simmer for 15 minutes until the carrots are tender.
  5. Blend until completely smooth, stir in the cream, and season with salt and pepper to taste.

Okay so this is the easiest carrot soup you will ever make. Grab about a kilo of carrots, one onion, a couple of cloves of garlic and a big thumb of ginger. Chop everything roughly, it all gets blended anyway. Soften the onion in a bit of olive oil, then in go the garlic and ginger for a minute. Tip in the carrots and a litre of veg stock, boil then simmer fifteen minutes. Blend it smooth, finish with a splash of cream, salt and pepper. Done in twenty minutes, so good.
